I just tried making an ice cream cake - I put a layer of cake, then the ice cream (which I had frozen overnight) and then another layer of cake. I frosted it and then put it back in the freezer overnight. I went to go cut it and then cake separates from the ice cream. Is there something I am supposed to put in between the layers, like frosting, to make it all stay together when cutting it? Or maybe the problem was that it was too hard because I didn't let it thaw out.

I also thought the cake part didn't really look that good - it had that "frozen " look to it - almost like a freezer burn look to the cake part. It tasted good though!

Maybe I should thaw it out first and then cut it?

I would let it sit at room temperature for a few minutes before slicing.

Did you have the layer of ice cream at spreading consistency or did you just freeze a disc of ice cream the same size as the cakes???? If you had the ice cream softened and then spread the layer on top of the layer of cake and then sandwiched the other layer of cake on top and then refreeze the whole thing.....it should work out ok.......the ice cream should help to adhere the cakes to itself
