When I was looking for a cake decoratorer for my wedding ...I found a lady who used juice in place of water in her recipe? I would like to know how this works if anbody knows. I am really thinking of investing in the cake docotor books. Can someone tell me what I should expect fromt his book. I hear all good raves about so I think it would be worth the money. I enjoy do this as a hobby but I am not so good as to think and try recipes on my own. Just being curious icon_biggrin.gif

The Cake Mix Doctor is a great investment - and it is usually about $10 if you can find it at a Walmart. I use a lot of the recipes out of it and get rave reviews from all of them.

I just got my cake doctor book and can't put it down. I do use guava nectar in my guava cake

You can use juices instead of water in many recipes. It's just like you can use milk instead of water to make a denser cake. Sometimes it depends on the juice and whether it'll give a strong flavor or just a slight flavor to the cake.

I have used orange juice in yellow cake before and thought it was good.

What other flavors of juice are good and for what flavor cake mix???? icon_smile.gif

my question is, juices tend be very acidic, especially citrus and apple. Don't you need to adjust the baking powder (or baking soda I can't remember which) to take on all the extra acid?

good question traci....I am going to buy the cake docotor book tomorrow and a new mixer since I have blown up two of them in 2 months. DH wants me to get a kitchen aid but I said once I get 3 wedding cake orders that will be my gift to myself (since I know I am that good ..lol). But list some juices with the flavor cakes. Have fun....Dang I love this site!!! icon_biggrin.gificon_lol.gif

Apple juice and cinnamon in the cake batter. Sprinkle the top with brown sugar and more cinnamon. That would make a nice coffee cake. At least I think so... LOL...
Maybe a yellow cake mix.

My mom has always used the juice from the pineapple in place of water when she makes pineapple upside down cake. It always tastes great too.

Girl! at the rate you are going you'd be better off buying the KA now ... I just got the series 5 prof for $200 at a closeout store..... I heard that you can get a good deal through qvc .... trust me it's worth the investment!

I've used pineapple juice with a yellow cake mix and then used pineapple preserves for the filling...it came out really nice....the cake was fluffier than usual so if you're going to stack it, I would do a test cake before going full speed ahead.

I've used juice to make cake balls. I've used pineapple juice and yellow cake scraps to make a pina colada type ball. i covered in white chocolate drizzle and toasted coconut. They were for a hawaiian themed anniversary party. Rave reviews!!

I love the taste of pina coladas but I hate shredded coconut. And I was just thinking I would love to make a pina colada cake. Any ideas? What about pineapple juice and coco lopez?

I use pear nectar in ALL my cakes no matter what the flavor and I also add 3 - pear halves pureed. They come out moist and with a subtle taste. A Lady that owned a bakery for years told me to do this. She use to do it too. Actually the only cake I do not use pears in is my deep dark chocolate cake.
