Pear Curd?????

Does anybody have or ever heard of a recipe for pear curd?

I have request for it for a groom's cake in June. They want a chocolate cake decorated with chocolate dipped pears and a pear curd to serve over each slice of cake.

Sounds great........except I can't seem to find a recipe for pear curd!!!!!! icon_confused.gif

hmmmm,
goin off the top of my head here;
do you have a chinoise (sp) that kinda cone shaped sieve thingee.
Maybe you can poach some pears til they are nice n tender in some simple syrup with brandy and cloves and then press it through the chinoisse or chinois (whatever, sheesh) and then reduce that to a nice syrup and use that as a sauce for the cake or something. (should carmelize and have a beautiful golden color to it)

If you don't have a chinoise(i'm going off of your spelling chaplps! Lol) you can try and jsut puree the whole thing then you can seive it through a regular fine mesh seive that you can buy at the grocery store or tuesday morning if you have it. Those chinoises are so outrageously expensive, at least the ones i've seen are.

sounds good to me!!! I usually get all my great baking stuff at second hand stores or garage sales anyways. I try never to pay full price and sometimes boy howdey you find a keeper.

I found this recipe and though its for an apple filling, I can't see why you couldn't substitute pear: http://www.ladycakes.com/Recipes/Fillings/Apple%20Filling.htm

I looked over and over and found no recipe for an actual pear curd. If they are asking for this, I am assuming they have eaten it before. Curd is usually very thick and of spreading consistency, if they want it served over the cake..are the actually looking for a sauce, more along the lines of preserves?

I wonder if you could make it just as you would a lemon or orange curd, but use pear juice instead? It's worth an experimental try, huh? Maybe just get a can of pears in their own juices and use that...I don't think pear juice is sold on its own anywhere is it?? icon_confused.gificon_razz.gif

But they also could be referring to something totally different than a traditional curd that they're referring to as curd because it's what it reminds them of or something. You might want to ask them exactly what they mean by 'pear curd'...it could be something that might have a different (and correct) name, which would help you in your recipe search. icon_smile.gif

They do sell a pear juice. The store I found it at is similar to a Trader Joes so I'd imagine you could find it there or at a co-op or something. It looked like a large, brand name of juice and was in a glass bottle. You might check local places too, my regular grocery stores are now selling more upscale juices.

Or you could puree really ripe pears and strain the juice. That would probably be my first pick. It's easy and you'd get the best flavor.

However most of the recipes I'm seeing for other fruit (raspberry, passion fruit, peach, etc.) use puree, not just the strained juice.

I don't think plain juice would be strong enough.

You could probably use a recipe for raspberry curd and substitute pears. That would be the first place I would start.

You could definetely substitute pear juice for any recipe that call for lemon juice.

Thanks for all your suggestions. Yes pear juice is sold in cans. I use that all the time. It comes in cans just like soda cans and in on the juice isle of my local grocery. I am going to try to make some pear curd using some purreed pears and the recipe for lemon curd. Will let you know how it turns out.
