Thought I'd share this email I got back from a customer. It was a christening cake ordered by the grandmother. It just made my day.
"What a hit! Kristy had it displayed on a table all by itself.... I wish that you could've heard the people's reactions to the the cake. First of all, they all said that it looked like a wedding cake...they were so impressed with the decorating...you are THE BEST decorator that I have ever seen...I mean that. The cake was fabulous. People could not get over the fact that the bananas and strawberries were fresh! The icing was a huge hit...you know how a lot of people leave a lot of icing on the plates.???? Because it's too sweet..or greasy heavy? Not the case here...everyone remarked at how light and airy it was, not too sweet, not too thick."

wow that is a Beautiful cake. You deserved every word she said...hmm.. what icing do you use?? Mine seems to be the crusting BC.. Not to fond of it, just tried out another one yesturday.. WAY better! ok Back to your cake.. Again, JUST BEAUTIFUL!!!!

The icing was IMB and the filling was IMB with fresh strawberries and bananas. I cut them just before filling so they are fresh and the bananas don't have a chance to turn.

Sorry, kinda new at this. What's IMB icing and where do I find the recipe. The recipe I use is the Wilton BC recipe and although everyone likes it, they do say it's too rich.
Hiya bfelt and welcome to CC.
IMB or IMBC is Italian Meringue Buttercream frosting. The recipe is here on cake central.
It's basically a two part frosting that starts with meringue made with hot sugar syrup like divinity instead of just beating in granualted sugar and then the fat (butter) and flavorings are added to make it a butter cream. One that is less sweet and has less of a "fat" or greasy feel on the tongue.
The recipe on here is good and also there is one on the Martha Stewert site also.

You can still use the Wilton bc recipe for things like embellishments like roses and stuff. And use the IMBC for your basefrosting and borders.

I think your cake is very beautiful. I would like to make a cake similar to this one for my MIL to take to church with her. If you don't mind It won't be exact.

Sorry Mary-Ann...I was so confused by IMB that I forgot to tell you what a wonderful job you did on your cake. It is absolutely beautiful. The words spoken were well deserved.

So gorgeous. I, too, wish I had a cake like that at my daughter's baptism. It's just perfect. You definitely deserve all the praise. Ever since I have first visited this site, I am just overcome by everyone's talent. You all should get letters like that. In fact, I now sorely regret not thanking my baker for my wedding cake.
You did a beautiful job. The buttercream looks unbelievable. I am going to try it tomorrow. I haven't glanced at the recipe, but I'm wondering if it can be made in advance? It's for my daughter's birthday cake, and to prevent unwanted stress, I am hoping to decorate it the night before the party. I have heard so much praise for the IMBC. I am getting kind of sick of the Wilton recipe. Regardless of what I do, it seems gritty to me.
But, back to your cake...it is perfect. I'm so glad that it was recognized...and the fresh fruit filling has me drooling.
