I have a bridal shower cake to do. I'd like to cover it in fondant, but would also like to have a more delicate filling than buttercream - but then I would have to refrigerate it, and then i would have to do all the decorating the morning of the shower (which is mid-morning). Are there any fillings that I can use and still let it set out overnight? Any ideas? Is this even making sense ? icon_smile.gif

What about using a type of fondant that can be refridgerated? I think Satin Ice can be.....I'm not sure if that was much help.

My friend found a filling recipe that doesn't need to be refrigerated. It is delicious. You can use any type of chocolate chip. She used Andes mint pieces, and it was spectacular. It doesn't have any milk in it, and it stays thick for a very long time!

Here is the recipe:

Chocolate Filling

1/2 cup water
1/2 cup sugar
2 Tablespoons cornstarch

Mix together. & cook on medium until thick. Take off burner. Add 1 Tablespoon butter and 2 oz semi-sweet chocolate. Melt. Chill until thick.

This is enough to fill a 2 layer 6 inch cake.

Here is another recipe that doesn't have to be refrigerated. It is for a fresh strawberry pie, but don't put in the fresh fruit.

3-4 level tablespoon corn starch
1 cup sugar
2 tablespoon corn syrup
1 cup water
2 tablespoon dry strawberry jello

boil until thick. Take off stove and add 2 tablespoon dry strawberry Jello. Add red food coloring as desired.

Use any flavor of Jello. Peach and lemon are delicious also.

I had a cake delivery last night,made it the night befor and placed it in the refrigerator. No probs at all with MMF.

My vote goes to whipped ganache. I did 2 fondant covered cakes filled with this and both of them were out on the counter 2 days before they were eaten - I happened to be a guest at one party and the cake was beautiful, no problems at all. Once you have that fondant on the cake it should act as an airtight seal. Good luck!

You can refridgate fondant. However, it gets sticky, so you can NOT touch it or try to decorate it after it has been chilled. You will cause any fondant you touch to liquify. If you completely finish your cake, decorations and all and leave it in the fridge, it will be fine - just take it out and serve. It will dry out as it sits and it will be fine to cut and serve. Have done this several times will both small and large cakes and both Satin Ice and Wilton fondant.
