I just wanted to say thanks to Susan (Lazy_Susan) for the awesome Peanut Butter cake recipe she posted in the
website's recipe section.
I am terrible at following recipes, so i did a few modifications, like baking it in an 8 inch pan (3inches high)
I made a dark chocolate ganache as a filling with peanut butter mixed into it, and white chocoalte ganache as
a topping. I didnt decorate it, as it was going to be for morning tea at work.
I got rave reviews for it, everyone that tried it loved it!!! We had a new guy start today, and he tried the cake at
morning tea, after morning tea, one of our team members brought him around to personally introduce him to
everyone, and the new guy said to me "the cake was very nice", and the other guy says to him, oh you
got to try one of her cakes, yeah "Natalia is the cakemaker of the Gods, we're not worthy, but we try "
Gee what a compliment!!!
Anyway had to share!!! Im happy with my cake outcome!!!
Fran, please don't go near this cake, i know how you feel about Peanut butter can chocolate (hehehehe)

All day i've had people come up to me to ask for seconds, but the whole cake was gone at morning tea. That doesnt usually happen, there is always at least a couple of pieces left behind. But not today!!

morning tea!...wow, I'm doing good just to get a cup of coffee at work!! That's if the guys haven't already gotten to it and not bothered to put on a fresh pot! ...some people think just cuz their wives do it for them at home, that the female employees are their substitute wives at work!!

We dont have morning tea every day, just every Tuesday at 10.00am.
Everyone seems to look forward to when it's my turn to cater. I always put some effort in to making a cake or something else, whilst most ppl will bring in store bought cookies, chips etc.

The filling was
480gms of dark chocolate buttons
200mls of thickened cream
95gms-200gms of smooth peanut butter (i will explain why the different amounts later)
Heat cream in a heavy pan, and once it starts to simmer add chocolate buttons, remove from heat and stir until completely combined. Add 95 gms of peanut butter. At this stage i would let it cool down for about 20 minutes and taste it, if you feel it doesnt have enough peanut taste (which i didnt) then add a bit more until you're happy with the flavour. I made the mistake of going from 95gms to 200 in one step, and i found the ganache to be a bit salty, i didnt quite like it, but i put it on the cake anyway, In the end, it offset with the sweetness of the cake, and it was really yummy.
This was enough to fill twice, my cake was three 1 inch layers. HMMMM
The topping ganache was
480gms of white chocolate
200mls of cream
same method as before, but before it's completely cooled you pour it over the cake.
Hope this helps and that you enjoy it, i would recommend that you try out the ganache with peanut butter and add the peanut butter in bits rather than in a big glob like i did
