HI

Just finished one of the cakes for Wilton Course 1 and would like some criticism please! I couldn't get my icing smooth enough and my clouds weren't very fluffy.......I don't think the stars were too bad but I'm open to suggestions etc.

Okay, having problems downsizing the picture is there anyone out there that could help????? (did I mention I hate this computer???? not friendly at all!)
This picture was emailed to me because I gave it to my Mom and Dad and forgot to take a picture so she took one for me.....would that be the problem?

If you look at the bottom of each post you will see dfferent boxes like PM , photos, etc. just click on email and it will email to me... Every member has this option at the bottom of their post... Cant wait to see you cake...

I looked at your beautiful cake and I think it is very very good for first course.. A little tip I found is using a actual speckeling knife that you can buy at any hardware store helps make it smoother and bowl of HOT HOT water to dip it in..between swipes.. On this particular cake tho I think it adds to it making it look more like a sky .. Cant really tell unless you look close.. But the rainbow takes the attention of this cake... NICE even stars GREAT JOB well done keep it up!!..

I tried the hot water and spatula trick before but I found it changed my color to a darker tone. So I was scared it would do that to this cake....am I doing something wrong?

Did you use the Viva papertowel method? Also, did you have alot of air bubbles in the frosting? If so, beat at a slower speed with paddle attachment. Let set a few minutes, then run a spatula through the frosting.

For your 1st cake I think you did a wonderful job. Excellent Job on the stars,nice & even. I also think the no so smooth frosting adds a nice sky effect.
My 1st Wilton class cake was Clowns. You can check it out in my photos.

You did a really nice job on getting all those stars the same size. Looke really neat. Your clouds look just fine to me, too. I guess if you wanted them more puffy, next time you will put more pressure on the bag.

Your icing is really pretty smooth for your first time. Just keep practicing the smoothing techniques outlined by others before me and you will be an old pro at it in no time.

Thank you all for your kind remarks and tips of the trade!

Mac:

I did have air bubbles in my icing and was beating at a higher speed, I did have the paddle attachment on but will definately follow your advice!

Everybody was laughing at my cake because it was so bright! All of the other cakes were pastel colors....guess I went overboard on the food coloring! LOL! (I personally liked the bright colors lol)

I'm sure glad I have a place to turn for some pointers especially from such great cake artists! Thanks again for the comments and tips on how to improve! I will be keeping all these things in mind when I do my next cake.

Shame on them for laughing. I don't think that was too nice. So tell them that all the top decorators use the dark fashion colors. So There!

a very good job for a course 1 cake , The rainbow was great nice star motion. I did see the clouds inperfection (but thats what makes a cake custom one of a kind ) with time you will get the hang of it. I learn to use a large star tip and make round circle motion. The paper towel method is the best when the frosting is harden (for that smooth look). You did a great job and keep those cake going . I'm beening honest. thumbs_up.gif

I think your cake is very pretty. Why would anyone laugh at your colors. I love the bright colors. RUDE PEOPLE! Shame on them. I for one can't wait to see how well you will be doing as your skills get fine tuned.

I think that your cake looks wonderful. I am still trying not to beat my frosting at high speeds too and find that I still have a lot of air bubbles, whihc wreaks havoc for smoothing.

You did a wonderful job, especially with you even pressure on your stars! thumbs_up.gif

They were probably just jealous that they couldn't pull up that beautiful red!! I think it's really nice (as I said before) and I can't imagine anyone laughing at it. Shame on them!

Thanks guys for the support!

They were just teasing me....including the instructor I didn't take any offense to it because compared to everyone else's cakes you almost needed sunglasses for mine lol!! I do like the bold colors for that type of cake and would do the same colors again for that cake.

I think I'm too tense still, I have to relax my wrists a bit more and kind of "float", at least that's what I think my problem is......

You cake looks great! No criticism here. Your clouds don't look puffy, but that's pretty hard to do with a 14(?) star tip, so no worries! Except that they're trying to teach you the zigzag technique there, a #12 would work much better for great huge mounds of fluffy clouds!

Congrats on finally being able to take the class, though! I guess things are working out well for you now that you're closer to civilization?

It is great being back in civilization and I can't believe I'm actually taking the classes! I have to drive 2 hours to get there and 2 hours back but I am really happy I can finally do this, I've waited so long! thumbs_up.gif Next week is roses so I'm a little freaked out because I tried to learn how to do roses on my own and what a disaster!! I hope I don't get too discouraged, I really would like to be able to start putting flowers on the cakes!

Hi, I also loved your bright colors, your cake looks wonderful! I haven't been able to make my stars as uniform as yours and without the little peaks on top!

About smoothing the icing... it looks like the blue might have been a little dry, which can make it more difficult to get really smooth, maybe try making it more moist and softer. Janice
