I made some cookies for valentines with antonia74 recipes, and i have icing leftover. this morning when i looked at it, it looked to have separated. I read that this can happen and icing sugar and stiring should fix it. my question is should i use my kitchen aid to mix it or just add some icing sugar and stir it by hand. and should this be done just before i use it again or now. thanks!

I would not add any sugar. Just stir it with a metal spoon and it should be fine.

Yeah, I agree with hn87519. I just use my spatula and stir it by hand. Then you can adjust the consistency after you stir it by adding more water if you need to.

This icing will keep in a well-sealed container at room temp. for 2 weeks.

30 days? Great! I guess I never gave it that long before. I will have to try that some time.

I always put mine back in the KA and remix for close to the whole 10 minutes. The two times I've tried to rush and just stir it back together, the cookies looked great when I finished them, but when the icing dried the texture was off. The icing was almost grainy and crumbly, not smooth like it usually is.

I didn't realize the texture was off until I was at the shower eating one, and luckily everybody else thought they were fine, but I knew they could have been better! icon_redface.gif

SO, my vote is to remix it, or at least if you stir it, do a test cookie and let it dry to make sure you're happy with it.

Laura.
