Strawberry Cake From Doctored Mix

Anyone have a good recipe for Strawberry Cake made by doctoring a mix? I have the Cake Mix Doctor Books on order but haven't gotten them yet. Does anyone know if there is a good recipe in there?

Yes there is a triple decker strawberry cake. Here's the recipe:

CAKE:
1 plain white cake mix
1 pkg (3oz) strawberry gelatin
4 Tbsp all purpose flour
1c oil
1/2c granulated sugar
1/2c whole milk
4 lg eggs
1/2c finely chopped strawberries and juice

Preheat oven to 350. Lightly grease and flour three 9 in pans. Place cake mix, gelatin, flour, oil, sugar, milk, eggs, and strawberries and juice in a lg mixing bowl and blend on low speed for 1 minute. Scrape down the sides of bowl and beat on med speed for 2 minutes. Divide the batter between the pans. Bake cakes for 33-35 minutes. Cool for 10 minutes and invert on rack and cool completely.

FROSTING:
1 stick butter, softened
4c powdered sugar, sifted or more if needed
1/2c finely chopped strawberries and juice, or more if needed
1c halved fresh strawberries for garnish

Blend softened butter in large bowl on low speed until fluffy--20 seconds. Add 4c sugar and 1/2c strawberries and juice. Blend on low speed until frosting is creamy. If too thin, add more sugar. If it is too thick add more strawberries.

Place cake after assembled in refrigerator, uncoverd, until the frosting sets, 20 minutes.

Thanks Chrissy. Do you use unsweetened fresh or frozen strawberries or the ones in syrup for this?

The unsweetened fresh strawberries work best. I have used both the recipe just says fresh strawberries. The frozen ones seem to make the icing too thin!!!

My recipe calls for less ingredients and it is really yummy. I prepare my yellow cake mix as called for but cut the water by 1/4 cup and add 1 cup pureed (fresh or frozen) strawberries. Bake as required at 350.
Talk about moist!!!!! Woowee this cake is deeeelicious!! icon_biggrin.gif

I prepared this as a bundt cake once and served the slices of cake over a puddle of the pureed strawberries and topped the slice with a dollop of Cool Whip. Wow! thumbs_up.gif
