ok. I'm going to try a topsy-turvy cake for my MIL bday. There won't be many people there, but I just want to try this style cake. Anyway, I thought for the three cakes...
1. 3 layer white chocolate cake with raspberry mousse and white chocolate IBC,
2. 2 layers Coconut cake and middle layer dark chocolate cake with coconut IBC,
3. 2 layer chocolate cake and middle layer banana cake - This is where I'm stuck. Should I make chocolate icing? Change the layers so there are 2 banana and 1 chocolate? Peanut butter? Banan? What do you think?

chocolate, banana and.... maybe sliced strawberries for the layers? Or whipped frosting ... That might be a nice 'banana split' flavor for it.
