What Is Evaporated Milk?

I know this is used in recipes but how is it different than regular milk. So many milks.

Powdered milk
Sweetened condensed milk
evaporated milk
whole milk
soy milk
rice milk....

evaporated = 1/2 water removed from the milk

Hey Doug, have you tried using carnation evap. milk when baking in place of the milk you usually use? What do you think would happen to the cake in terms of texture if evap. milk was used in place of reg. milk.

no, haven't tried it. usually just use real milk.

i'm betting it would be richer and wee bit denser...but can't prove that
