I just received an order for March. Would like a stacked round layer cake with pretty fresh flowers on top. I have never worked with fresh flowers.
What do I need to create this?
How do I create it?
What should be the timing or decorating it?
Any other information on this would be appreciate.
Have no idea where to start.
Thanks,
Tanya

Well, you want to put the flowers on it as close as possible to delivery time. You must either use organically grown flowers that have not been shipped in chemical preservatives or have a barrier between the cake and the flowers. Parchment paper or waxed paper is good for a barrier. You also have to make sure that none of the flowers you use are poisonous and remove any stamens from the centres that can cause allergic reactions. Some flowers like roses and baby's breath with ivy and fern, hold up well out of water. Others must have a water source, like daisies or lilies. So you may need floral oasis and a bowl to make your arrangement in and need to dowel the cake and board the dish of flowers, for support.

Your florist can tell you which flowers are poisonous and which are not.
I've only done one wedding cake, but they way I did it worked out well. I cut out a layer of parchment paper a few inches smaller than the top and arranged the roses on it. It was a tiered triangle cake, so they were a little tricky to arrange. They looked really good as they kind of opened up a little as the night went on. I was a little worried about how it would work, but it turned out to be very easy and elegant.
