Hi Laura,

I wrap my cakes in heavy duty foil and thraw them out a day before I decorate.

Keep the cakes wrapped in the foil to thraw out. When the condensation disappear from the foil, then I unwrap.

Can a decorated cake be frozen. I need a cake for Friday but I will have to make it on Tuesday...so can I freeze it?

I have been told (by a customer) that my decorated cake was fine after freezing and thawing. My experience, though, is that if you have any deep colors (requiring lots of food color/paste) you may encounter a problem with bleeding when the cake is defrosting. That is the only problem I remember when I froze a decorated cakes years ago. If you have only used pastel colors, you may be okay in that department. I would suggest finding a box close in size to the decorated cake; wrapping it in saran wrap; then foil.

Do you mean undecorated or decorated? I've never frozen a decorated cake before...don't want to chance the colors bleeding.
