Sorry to do the MMF thing again. I know it's been done to death, but I have one more question.

Everything I have read says --DO NOT PUT FONDANT IN THE REFRIDGERATOR. I thought that was because the humidity in the fridge would cause the fondant to breakdown and get soft and sticky. Last night I made MMF for the first time. I thought it was wonderfully easy to make and it feels like it will be easy to work with. I decided to do an experiment and put about a 1/2" ball of the MMF in the fridge overnight. I have taken it out and let it come back to room temperature and it seems to be just as good as it was when I put it in there. So my question ---Why does Fondant not go in the fridge?

Honestly, I don't know. But from personal experience, I had bad luck refrigerating MMF. After all the hard work decorating a cake, I won't chance putting MMF in the fridge again, LOL!

MMF is generally rolled thin and it also absorbs moisture from the the icing underneath - maybe when it's on a cake it acts differently?

I actually haven't had any problem putting mmf in the frig. I did a carrot cake with cream cheese frosting and mmf and I had to refrigerate it. It was perfectly fine the next day. It was in the frig for nearly 24 hours.

I put the rock climbing cake in the fridge overnight too, and it was fine. There was some condensation on the MMF while it came back to room temp, but it didn't seem to affect the cake at all. And since practically every parent at the party asked the lady for my phone number, I'm guessing it didn't affect the cake at all.
