I had a request for a bitter sweet chocolate cake with dark chocolate frosting this week and I have never made one before! Does anyone have a tried and true recipe?

Thanks so much!! icon_smile.gif

Oh, I should add... It needs to be regular cake consistency not flourless etc as they want it to be an Elmo cake also so it will need to be shaped and decorated.

Bittersweet can be overwhelming all by itself, but it is the preferred flavor of chocolate for many parts of Western Europe.

What I would do is to use semi-sweet chocolate to make the icing, but a bittersweet chocolate for a ganache filling, to bring up the sweetness a bit without masking the bittersweet flavor they are seeking.
