How do you mix soo much batter?!?! Do you have a heavy duty huge mixer, im afraid ill bust my kitchen aid.
I, too, have a KitchenAid (5 quart, I think). I basically just mix up a double batch of batter at a time, and keep plugging away at it.
Basically, I don't use more than 2 double recipes (or 4 boxes total) for cakes up to a half-sheet size. While I have one (or more) cake in the oven, I start making my icing if I don't already have it done, then mix up the next batch of batter shortly before the baking cakes are done, so I am ready with newly filled pans as soon as the buzzer goes off.
I have mixed 8 batches of buttercream icing and a total of 12 double batches of cake batter back to back without hurting my mixer. Someday........I plan on having a 10-quart mixer, but for now this works....just time consuming!

I used to make them with a handmixer years ago. I made several with the 4.5 quart, now I have a 6 quart. You just have to stay within the capacity of the mixer. Usually about 2 cake mixes or the White Almond Sourcream extended recipe starting off by hand and then by paddle or 2 cake recipes for a 4.5 quart, three or so for the 6 quart.

I have a 5 qt mixer and I make a double batch of buttercream icing and it comes out really nice,as for the cake batter I usually make a double batch of all the liquid ingredients in the cake batter ,and then take it out and mix the flour with a wooden spatula in a big pot/bowl.Its a pain...but I love my kitchen aid.
i am so ready to get a bigger one...but don't know where to get the heavy duty ones???

I haven't done many wedding cakes, and I don't do them to sell, so this doesn't come up very often. However, I've always made the batter one batch at a time! My mixer (I don't even have a KA. boo hoo) only holds one regular-size batch of batter at a time. It's time consuming, but it works.
I'll mix up the dry ingredients for several batches in an assembly-line fashion, and have the wet ingredients measured out and ready to go. That way I can mix up enough batter for the big pans quickly.
i mix two recipes at a time. My biggest pan only holds three mixes/recipes so i haven't really had a problem doing it this way.
What i do is one day i make all my icing, place that aside, the next day i do all the baking, then the following day is icing the cake and decorating.
I also mix 2 recipes at a time, but I have everything else lined up and ready to go when they are done. It's just and organized assembly line. I have a sunbeam stand mixer, (really really want a Kitchen Aid!), and it seems to do very well. I try to make the icing the night before and stick it in the fridge. I usually do double batches of icing also. My husband comes in behind me and cleans up the Mess. Gotta love him!!!!
I just mix double batches at a time. While the one cake (largest) is baking, I mix the batch for the next cake. You are usually doing a different size cake the second, third, forth, etc..., so you can easily do this at the same time. I do all my batter first then the icing, so I don't have to keep washing the bowl out. (I just scrape it clean). Then while the cakes are cooling, I start doing all the frosting - double batches at a time. I'm all about time efficiency!!

I have a 6 quart Professional Kitchen Aid and I am able to mix 3 batches of butter cream at once with no problems. I usually mix 3 cake mixes at once. I shopped around for the Kitchen Aid and found the best prices at a store called Fryes. I live in Texas and I am not sure if these store are nationwide or not. I would not trade my Kitchen Aid for anything! I am very dependent on it.
