I make my BC w/ half butter, half crisco and some milk. Can it sit on the counter or do I have to refridgerate it? And if I can leave it out...for how long?
I think I remember saying that if it's covered in fondant than it can be left out for 3 days max....but I could be wrong. But what about if it's not covered?

I know it can sit out for at least 2 days at room temp, either covered in fondant or not. The sugar acts as a preservative for the butter and milk.

I'm not sure how much longer than the 2 days it's OK.

According to Wilton, 2-3 days, room temperature should be below 75F. I find 4-5 days is fine. You should always box your iced cakes or store them in a container, keeps the icing and cake from drying out and keeps the dust off. If a cake is boxed, I also bag the boxed cake to keep the moisture in. If you use salted butter, there is the additional preservative qualities of the salt.

I have left mine out for five days with no problem.

I use salted butter and additional 1/2 tablespoon salt

I also freeze it. It thaws and tastes fresh. People debate out this but for me, it works!
