I'm making a baby shower cake and cream cheese frosting has been requested, can I put MMF over cream cheese frosting? Can I refrigerate the decorated cake the night before? I'm making the practice cake this weekend. Thank you.

I love baby shower cakes! Yes you can put MMF over creamcheese frosting. MMF does not take well to refrigeration though, the moisture makes it "melt". I'm assuming cream cheese frosting needs to be refrigerated, so i guess I'm not much help! Maybe someone else has some suggestions!

Hi,
MMF will go with anything flavor. so yes you can...BUT i'm just concerned about the Cream Cheese frosting not being refrigerated.. MMF can be at room temp. for 2 days w/out going bad. I would suggest that put the Cream Cheese and MMF on the day you will be serving it:, unless you will be doing a very intriquette (? spelling) decoration, because that shoudl be ok to put the whole cake w/ MMF and Cream Cheese at room temp. that same day it will be served.. I have put Carror Cake w/ Cream cheese frosting all day and it didn't go bad.) icon_smile.gif

Well, I guess these days you are supposed to refrigerate cream cheese frosting. However for many, many moons before we heard this, I never refrigerated cakes iced with it, 4-5 days at room temperatures below 75F and no problems. I do use salted butter though and likely the salt in addition to the sugar acted as preservatives. There is no milk or liquid added to the recipe I use because it is thin enough without it. I wouldn't do it for a customer but I do it for home use. I have done wedding cakes that were out the day before and the day of with no problems but only after warning the customer.
However I have never used it under any kind of fondant, mainly because I wonder if the combination of the cream cheese and the shortening or butter is a bit more fat than fondant can handle without it bleeding through. I know many of you like to apply your marshmallow fondant really thinly. I don't apply fondant less than 1/4 inch thick and I would think that would be a good rule of thumb if you are putting cream cheese icing under it. I think if it were me, I would go with the cream cheese as a filling and use the buttercream under the fondant. It does taste good that way. Just my opinion.

I just did a cake with cream cheese and MMF, but it was served the same day. Still, I had the cake in the freesor for a few hours while decorating, and it seemed fine. Of course there can be quite a difference between a few hours and a whole day or more. the flavors were fine though, and I didn't notice any melting or deteriation of the MMF. Good luck!

I did my bikini cake (in my photos) with the crusting cream cheese frosting and MMF and it was fine. I had it in the fridge for 24 hours and I had NO problems whatsoever. It looked as good as it did when I first finished it.
