I need to make a diabetic icing for my daughters class Valentine Day cupcakes. The school has a "NO SUGAR as first ingredient" policy. That boots buttercream and fondant right out of the ballpark. so I'm planning on using the recipe I found on this site for diabetic icing which calls for D-Zerta. I've been to 4 supermarkets already and no one carries it. What to do! Is there a subsitute I can use if I can't find it? Thanks in advance for any help with this.
I would suggest using the diabetic icing recipe on this site that is made with splenda and cream cheese:

This icing tastes outstanding and the ingredients are readily available at the supermarket.
That is my new favorite icing! You get a different outcome with different flavored pudding mix!
I was thinking about a cream cheese icing recipe, but one of the other moms thought the kids may not like the taste (I know my kids don't like cream cheese). But at this point, I'm willing to go for it. Thanks for the tip! (no pun intended
actually, the cake part is fine with the school since the main ingredient is flour. It's the icing that's the big concern because it's mainly sugar. I did find another diabetic icing recipe using cream cheese, so I'm going to try that. Thanks to everyone for your help!
