I have a new prospective client--a coffee shop specializing in organic, vegan, natural kinds of desserts. They would like some products that are vegan, such as tofu chocolate pie. I can handle their non-vegetarian products, but I've never tried tofu desserts. Does anyone have some good vegan recipes?
I have several vegan cake and frosting recipes. And a couple tried and true vegan desert recipes. Although we aren't all that big on deserts in our house, so I don't make them often.

There is a really yummy vegan chocolate cake recipe in the "The Joy of Cooking".
To be truly vegan you will need to buy vegan sugar. It's not bone-char processed like most, if not all, sugars you find in the grocery store.
Do you have access to a good health food store? If so I can recommend some good products.
My mom used to have this recipe for banana pudding made with soft silken tofu.
It contained silk tofu, honey, orange juice and bananas. You put everything into a food procesor or blender and pureed it until smooth. It was too bad tasting, you could probably make that somehow and get it to thicken up to make it into banana cream pie (minus the cream maybe).

I recently got a vanilla low-fat pudding mix at my local health food store. I'm on weight watchers, but I also eat all natural, no artifical sweeteners or preservatives. I haven't tried it yet, but you mix it with tofu. I thought it would make a great cake filling. It's all natural, dairy free, 100% vegan with no refined sugar. There is also a recipe on the package for a banana dream pie, using the mix, tofu and fresh bananas. Anyway, good luck. I hope you find some good recipes.
