I'm going to try making ganache for the first time & was wondering what most people fill their cake with when using ganache as the icing? I was thinking of whipped cream... any other suggestions on what would taste good? Or do you fill cakes when covering with ganache?

The more ganache, the better. I'd add whipped ganache with a hint of a liqueur.

I've used whipped ganache, chocolate mousse, chocolate whipped cream, and, most recently, cookies & cream filling (basically sweetened whipped cream into which you fold chopped Oreos.) All of these are tasty!
If it goes with chocolate, use it!

since ganache is sweet and decadent, I would go with smooth and creamy like the middle of a hostess ding dong! Mmmmm!!

I don't think I've eaten an authentic cannoli. What's in the filling?

Cannolis are traditionally made with ricotta cheese and powdered sugar. With either candied fruits or chocolate shavings or chuncks throughout. Some have cinnamon and nutmegas well. The filling is stuffed inside a hard tubular pastry shell. My Italian gransmother made the best cannoli's! The filling would be awesome in a cake, I never thought of that before!

I have covered a yellow cake with chocolate mousse filling with ganache not too long ago and it was so yummy. My father said it was the best cake he had ever had and now I have to make one for my mom to give him for valentines day.

I made a chocolate cake that I covered with bitersweet chocolate ganache and I used orange curd mousse as filling (WBH recipe). It was yummy!!

I usually fill with ganache... a thicker version of what I iced with. I find if you fill with something else it takes away from the ganache icing.. if that makes sense.

I've done raspberry preserves filling with ganache in chocolate cake, that was yummy. Also, I made a coffee buttercream with ganache and it was GREAT. I just made a basic buttercream and added about 2 Tbs instant coffee. MMMM!
