I had a whole cake designed for someone's bday at work and now I found out she doesn't like buttercream. I need something (I guess whipped cream frosting) that I can use for frosting the cake as well as doing basket weaving and piping with. Please pass on some good suggestions and recipes please. Thanx in advance!

She probably thinks of the awful kind made with shortening and powdered sugar. I'd explain things further and have her try a real buttercream.

How about making white chocolate ganache and whipping it? I ended up doing that last night, and it turned out great! Soo easy and sooooo yummy!

Does it taste kind of like whipped cream?

That recipe looks similar to the house BC in the WBH. It's going to taste just like class buttercream, except it's lighter. It did not pass any taste tests at my house. You'll get the same waxy mouth feel.

Trust me, I've tried a lot!

I use IMBC's exclusively. Anything with shortening (whether it be high ratio or Crisco) is simply not the same.

well i guess me and all my customers like my crappy kind of BC since i make it with the crisco and powdered sugar. people love my BC. i have used the one in the cake supply store that you just whip with your KA and it's really good, but i haven't tried piping with it or trying a basket weave for that matter. icon_confused.gif

I don't like real buttercream so I use the crisco kind and everyone loves it...

For people that won't eat any kind of buttercream, I make a whipped cream icing that is just regular homemade whipped cream with powdered sugar added until it is thick enough to use as icing. It's really good.

You can find a recipe for Italian Meringue Buttercream (IMBC) on www.marthastewart.com

I doubt you could do a basketweave pattern with whipped cream, but someone correct me if I'm wrong!
