I just finished up a cake and got a call and the party has been postponed until Tuesday!! The cake is filled with cookies n creme filling, iced in BC Dream topped with an edible image. My question is, can I freeze this cake until Tuesday and have it come out alright?? Should I just plan to do another one and eat this one. I wouldn't mind so much, but I have 7 other cakes to get out next week!!

Hi Momof4.... I had the exact same thing happen to me. The party was postponed from Sunday to Tuesday to Saturday (weather related). My solution was to make another, rather simply decorated cake to cut and eat and the original was to be seen only. However, I also had them do the following to try to keep the original cake great tasting:

Keep it in the box I put it in, tape up every seam and opening with Duct tape, then double wrap in plastic wrap and finally, wrap in aluminum foil. It froze just fine, and they said it tasted great - no bad taste or smell at all from the freezer because of the frosting.

I didn't charge the same price for the simple cake and the husband ended up taking it to work, since the original cake was still good.

You would have no problem freezing that type of cake. I do it all of the time and get RAVE reviews on my cakes. I've done it several times with edible image cakes. Just put in a cake box and wrap the box with plastic wrap. When you go to defrost it, put in the fridge overnight and pop open the lid of the box before you put it in the fridge. This way if the edible image sweats, it'll absorb back in without bleeding or leaving any spots.

Can I ask something?... If the party is postponed, how come it is your responsibility to keep the cake. You have done you part of the contract and shouldn't they have to pay for the cake and keep it themselves? Afterall, if you had ordered the cake from a store, the store does not care if your party is postponed. They would expect you to pay for the cake in full and collect it.

Also, if the cake cannot be stored, do you have to bake another one for them free of charge? It does not seem fair that you have to bear the cost.

I agree with Barbara, I would just state you have a agreed upon pick-up date, and that its their responsibility to store it, especially since you are so busy. This is not your problem! (well it is, but it shouldn't be..if that makes sense!) This makes me think I should put a clause on my site saying that cakes must be picked up on the contract date, and that there will be no refunds due to postponing of event or inclement weather(of course I only take deposits for cakes over a certain amount, so I guess we'd be eating it, lol).

I agree. Unless there was some unexplained acts of God (tornado, hurricane, tsunami, noreasters), why are you held responsible for their cancellation? icon_confused.gif

I agree with Barbara. You have the cake ready when promised and they should pick it up as scheduled. Of course, you would be happy to give them some tips on keeping it fresh.

Just my 2 cents.

I had that happen with a baby shower cake I made. I let them know that I would be happy to make them another cake but they were still responsible for picking up and paying for the first cakd and that the second cake would cost them the same. They had no problem with that.

I know I did not have to keep the cake for her, I just put it in the freezer and told her I could not guarantee how good it would be and she understood.
