Having spent quite a bit of time in Guatemala, with friends that live there, I wasn't aware that anything other than Fondant products were used on cakes. The people I know there only use Fondant for covering their cakes.

You don't NEED Meringue powder for the icing, it just helps to hold up at certain times. Since it's not overly hot there right now, you could get away with NOT using the powder.

I just use my judgement with shortening, powdered sugar and flavors. I haven't used to power in my icing in a long time.

edited to add, that this recipe from this site is a good base for a quick and easy Icing that would hold great down there in Guate.

900g/1 3/4 lb icing sugar(confectioners) sifted
325g 11oz shortening
1 1/2 tablespoons water
1 1/2 tablespoons vanilla
Pinch of salt

In a large bowl, blend all ingredients with an electric mixer for 3-5 mins.Pause to scrape the icing from the side of bowl, then mix for 1 min.
Refridgerate for 10m before using.

Thank you for the help you have given me! Yes, I have seen that mostly all cakes here are done with fondant, but growing up in nearby Costa Rica, it was totally the opposite, buttercream was the favorite there, so I use that all the time here... even if it does give me trouble sometimes like now!
Once again "Gracias!"
greetings from Guatemala
