Liguid Sugar And Glugose

Boneenati dear and others,

You have but that whitechocolatepaste recipe and I have made some work with finding glugose around here (Finlad). Finally I have glugose powder (150g), I ordered it from drugstore (it's for diapetic people normally).

Can I just add some water to it, or what would you do?



My second question is about that liguid sugar? Do I really have to make so much that? Recipe says 750 g of sucar. Recipe says that I need 50 grams of ready stuff.

Does this make any sense?

Hi Jenni
You dont have to make so much liquid sugar no, but the stuff can be stored in a jar and won't go off, so once you make it, you can keep it for next time. I also use liquid sugar as a filling for cakes, mixed with coconut syrup, i put it in a spray bottle and spray the layers of my cake before i fill them with fresh cream and caramel (YUMMY), so having a bit of extra liquid sugar never goes astray : ).
Unfortunately I am not sure about your question with the glucose, the recipe I posted was given to me by a teacher at a cake decorating workshop, and i really dont know of any substitutes. Im sure one of the other very helpful ladies around here may be able to help you with that one.
