Fudge Brownies

Thread Starter
I need to make brownies for my husbands coworkers and am totally out of the un-sweetened chocolate...or any chocolate for that matter. I only have cocoa powder and the basics. Dillema? I'd like to make the fudgey brownies without the chocolate instead of the cake like. Can anyone help me? Is there a way to make fudge brownies without the un-sweetened chocolate? icon_lol.gif

Thanks thumbs_up.gif

I've tried many recipes for Brownies using the cocoa powder, and from my experience all you get is a cake like brownie. I've even tried adding more butter thinking it was the fat content that was messing things up--but to no avail. I would LOVE it if someone had a solution to this!

Funny You should mention that. I added extra butter and well, It made them nice n fluffy, but it was still quite cake like. icon_lol.gif I guess I'll go out and buy the chocolate from now on unless anyone has any ideas on this. thumbs_up.gif

I make a very fudgey brownie using sweetened cocoa powder sold by ghiredelli(spelling?) It is the recipe they have on the side of their sweetened cocoa pan. Plus I throw in a half a bag of mini chocolate chips. Theyare really fudgey and not cake like at all. But you hae to have sweetened cocoa powder. Don't know if you could maybe add some sugar into the cocoa powder? Or just add extra sugar into the recipe? If you want the recipe let me know and I will post it.

there is a formula for the cocoa powder to unsweetened 1oz. choc square.
It's 3 level tbs. cocoa powder + 1 tbs. oil = 1 unsweetened chocolate square.
