I am SO frustrated... I am doing a Wilton train cake and I've done them before but I find the pan maddening...but today its worse!
On my first try, the toothpick I stuck into the hole on the top lied to me and the cake ended up not quite done and falling apart.
On my second try, the skewer I stuck into the hold on the top seemed ok...so I took out the cake and immediately tried to remove the top so I could make sure it was done (and burned my finger to a blister)...well since I was so hasty, a good portion of the cake broke off with the top of the pan. I put it back on but I highly doubt it will be sturdy enough to decorate tomorrow.
Soooo I guess my customer is gonna have REAL fresh cake... will be baking and decorating the same day tomorrow. GRRR! What makes me frustrated is its my own fault I have this order...I had turned it down due to being full this weekend...but then I had a cancellation and since I knew the lady really wanted the cake I called her back and offered to do her cake after all. I sure wish I had NOT called her back... *grumble*
Don't you hate when that happens?? I say get a good night's sleep, and things will be fine tomorrow. Looks like you'll have lots of cake for cake balls!
