Do cupcake cakes get messy when you start to serve them and pull the cupcakes apart? How to you keep them clean as they are served?

When I pull mine apart, no it is not messy at all.. This is the best way to save time for that "perfect icing". You can make as many as you want and they are easier to store than slices..

I thought I'd check out the tutorial...and I was so surprised! I thought you spread or piped the icing onto a flat piece of parchment or waxed paper, then laid the cupcakes upside down on top of it, chilled it, then turned it right-side-up and decorated it.

Would that work too? Wouldn't it be even more smooth and level without any effort?

I've never made one. icon_confused.gif

i suppose it would be possible....IF you first put a dab of icing on the bottom of every cupcake and laid on the bottom board first before flipping the whole affair. Given my luck, I'd be doing cupcake pick-up.

having made them...getting the top smooth no more challenging than on a regular cake.

as some one else pointed out, can attack the top with the big icing tip. or can just glop it on and spread. (I prefer glop because more icing goes down between the cupcakes and when you pull them apart....yipee extra icing!!!)

the first time I made one, I was amazed at how easy it was to make. The biggest challenge was fitting all those cupcakes onto the board (which BTW would be a good idea to double...it is a deceptively heavy thing when finished)

I agree these cute cakes are a bit challenging and take a bit of arranging and rearranging on the board to get the right effect going; and to get them all to fit on the board without too many gaps in between.
I used the dots on the bottom and stuck them on the board and icing them as one wasn't too bad. Here is one I did (borrowed design from a similar one I found on the net):

I did my first a few days ago for my hubby's Pre-K class and found it to be super easy! I just used a dab of melted white chocolate as the "glue" to hold the cupcakes on the board, allowed to dry, and then iced as I would a regular cake. I like the "glopping" it on like Doug because the kids LOVE icing and there was plenty down between the cupcakes!!
