I have one family member that LOVES strawberry cake and thinks strawberry cakemix is wonderful. I've never liked strawberry cakemix and would love an alternative. My scratch strawberry cake is really more of a strawberry shortcake. I make a simple syrup out of strawberry nectar and strawberry preserves to flavor the cake.

Hola Maria,

Here is a recipe that was in the August 2004 ACD magazine, posted by Pillsbury

Strawberry cake:
2 3/4 cup cake flour
2 1/2 tsp baking powder
2 cups sugar
1 pkg (4-serving size) strawberry flavored gelatin
1 cup butter
4 eggs
1 cup milk
1 tsp vanilla
1/2 cup pureed strawberries

Mix flour and baking powder in a small bow. Beat sugar, gelatin, and butter in a large bowl with an electric mixer on low speed for 30 seconds, scraping the bowl occasionaly. Beat on high speed about 3 mintues or until fluffy, scraping the bowl occasionally. Add eggs, one at a time, beating on high speed after each additon. Beat in the flour mixture and milk alternately on low speed. Beat in 1 tsp vanilla and pureed strawberries.

Bake at 350F fro 25-30 mins (3 9" pans)

I tried this recipe for ny neopolitan cake and it's a keeper...everyone loved it...I shared it with a neighboor and she has made it several times too.

let me know how it turns out!

Godiva,
Do you mean this cake makes 3 (9 inch) layers. That seems like a lot.

If you do it this way, you won't have to layer your cakes. You can always bake 2 9", or 2 8" and 1 6"...that's what I get out of the batter. Works well.

This looks like a nice recipe. too bad it has gelatin...

Does anybody have a good scratch recipe that doesn't use gelatin? We're vegetarians, and would LOVE a strawberry cake.

couldn't you just start w/ a good dense yellow or white cake then:

take strawberries and split into two portion one twice as big as other

larger portion send through the blender until very liquid. Either use as is or strain to get pulp out and replace the liquid in recipe w/ this.

smaller protion cut into pieces and mix into batter.

Alien_ Sunset,

Here is a recipe given to me by someone on this site, sorry I can't remember who it was. I haven't made it yet, but it is scratch and sounds really good.

Cake:

2 cups Butter, room temp
2 cups Sugar
3 Eggs, room temp
4 cups Flour
1 Tbsp Baking Powder
1 tsp Salt
1 cup Milk
2 Tbsp Strawberry Milk Syrup
1/2 cup Strawberry Puree (frozen berries, thawed and blended)
1 Tbsp Vanilla
2 Tbsp Strawberry Extract
1 tsp Almond Extract

Preheat oven to 350. Combine Milk, Syrup, and Puree and set aside. In a mixing bowl, beat room temp butter and sugar for 5 MINUTES on medium speed. It will be light and fluffy. Reduce speed to low. Add eggs one at a time beating 20 seconds after each addition. After all are added, beat for 30 additional seconds on medium speed. Next add in flour and milk alternating between each (flour, milk, flour, milk, flour). Beat until combined. Add in Vanilla and extracts and beat for 1 minute on medium speed. Taste the batter. It should taste really creamy and delicious. Makes 2 --8x3 layers.
Bake about 50 mins at 350 or until it tests done.
Will make 48-50 cupcakes.

I wish I could remember who gave this recipe to me, but I didn't write it down. Anyway, she gave me a frosting recipe also if you want that.

Hope you can use this one.

Cindy
