Baby Shower Cake And Shower Was Postponed

Hi all. I have a desperate question. I was in the process of making a baby shower cake for a friend. I baked the cakes and filled them, (not iced them). I was then working on all the fondant decorations when the shower was cancelled-postponed. I went ahead and froze my cakes. Well, now the shower is back on. Do you think it is safe for me to use the cakes and my fondant decorations? I baked the cakes on Jan. 15th and the shower is scheduled for Feb. 4th. If it is okay, when should I take the cakes out to defrost? Should the defrost in the fridge or on the counter. Thanks in advance.

Everything should be just fine. thumbs_up.gif

Defrost them (wrapped) in the refrigerator and then let them warm to room temp on the counter (still wrapped). They should be nice and moist and take the fondant well.

I agree with Rae--just thaw them wrapped and they will be just fine. I would take them out the night before you plan to decorate to thaw in the fridge and then let them come up to room temp for a couple of hours before you decorate.
