Buttercream is the easiest. You could also use raspberry or strawberry preserves

Don't preserves have to be refrigerated? I filled a cake with preserves once and granted it did sit out for like three days but then it got nasty... how long do preserves stay good out at room temp?

I found this really easy recipe for Bavarian creme at cooks.com. I made it a couple of days ago and filled a yellow cake with it.

1pt whipping cream
1 pkg. french vanilla instant pudding
1C milk
1tsp. vanilla

Mix all together in mixing bowl at high speed until very thick and stiff.

This does need refrigeration though, but it is super yummy!

Thanks for the good ideas. I ended up using buttercream frosting. I put it in the gallery under birthday cakes. First time I did that!
