Need Filling Ideas

I'm making my own wedding cake (and yes, everyone thinks I'm crazy) about 2 days before the wedding. Covering in fondant since it's an outdoor wedding in June in Arizona and I don't want the icing to melt. I need recipes for fillings that won't go bad if they siit out 2-3 days. I've tried looking on the forum for post, but don't have the time to look through ALL of the pages of posts.

Buttercream is the only filling that I sit out...but I've heard you can get store bought fillings-- like raspberry or lemon or whatever at cake decorating stores/websites that don't require refrigeration.

I haven't tried it, but wouldn't you be able to use canned pie filling. You would mix it with buttercream and that would be a tasty treat - I would imagine.

You can try fruit preserves, and you can mix those with buttercream to make it a creamier filling. Nutella is very good. Those are my favorite fillings for summer, I don't have to worry about them when its hot outside.

i like the idea of bc mixed with fruit perserve. My fiance doesn't want a fruit filled cake, but maybe the mix would be okay. Thanks

You could also go with the premade pudding too! I know that is an extra expense but since you buy them at room temp means you can store or eat them at that temp! HTH

I definitely recommend the sleeved fillings at cake shops...shelf-stable for 5 days...

Go to Christy's Cake's Supplies in Mesa, or ABC Cake Supplies in Phoenix--- They have a huge variety of the sleeve pastry fillings that don't need to be refidgerated..a ton of fruit fillings, bavarian creams etc.....

Wow, darlene_000, thanks. I wasn't expecting local shops. That's wonderful. I haven't lived in Az long and haven't had a chance to check out the local places.

Where are you located?

Christy's Cake Supplies is on Main St, just East of Country Club in Mesa. Christy is so friendly, her website is:

She has several choices of sleeve fillings.

ABC Baking Supplies is located on 28th St & Indian School, a little more central Phoenix, I was there yesterday for the first time, and they had a ton of fillings also.

Im sure you could find the perfect stuff--- Plus they have all the BEST supplies, which you will need if your doing your own cake!
