How Do I Make Strawberry Filling Without Gelatin?

Hi!
My daughter wants a cake with strawberry filling but we are vegetarians and I can't find a recipe that doesn't call for gelatin. We do eat dairy so whipped cream for instance is okay. Any ideas?

Along the gelatin vein:
-Have you tried Hain's gel deserts? They come in several flavors, including strawberry, and work just like jell-o.
-Also, agar-agar should work similarly to gelatin.
-And if worse comes to worse, you can try something using cornstarch as a thickener.
Alternatives:
I like making a nice whipped cream adding a little juice from strawberries that I have crushed and sweetened a little as a flavoring. Then putting a layer of the drained strawberries on top of that.

Alien...Is Haines still making the gelatin? Our local Whole Foods told us they don't make it anymore. My kids loved it.

here's how i would do it:
i would first macerate my strawberries with sugar (so they get all syrupy) and then make a slurry out of corn starch and water (about 2 tablespoons per cup of water) and then put my strawberries in a pan and get them to boiling gently, slowly stir in the slurry. boil for one minute stirring constantly. and then take it off and let it cool. It will thicken upon cooling. You will know when it's done when the liquid turns translucent and not cloudy (about 1 minute should do it)
Hmmm, I have some still in cupboard, but we aren't that big on gelatin like deserts, so they do sit around for a while.
A quick check of the web site and I don't see it there. Humph.
