Question for MOUSE??

I saw on another topic that you have baked the buttermilk devils food cake from the cake mix doctor. I was wondering if you've ever added a box of chocolate instant pudding to the mix?

The reason I ask is that my client wants a chocolate cake with buttercream icing and I will be using the ball pan. Since the 3D ball pan will need to have a firm texture I was wondering if adding the instant pudding would work. I definitely don't want to change the flavor in the buttermilk devil's food cake but this is one of the best chocolate cake recipes I offer. Can I send you a private message of the cake I have to make?

Adding a box of pudding and an extra egg will firm your cake up a bit.

Will pudding affect the flavor much?

I know they make a devils food pudding. I dont think that would effect the flavor at all.

I have not added anything to it to make it firmer, but I bet adding some melted butter would help, not sure how much though. Probably at least 1/2 a stick of butter (about 4 tablespoons).

How does melted butter help? Just curious.

Not sure how...maybe because it pulls the ingredients together better. Not sure, all I know is that it works. I made the Bride's White Cake from the Cake Mix Doctor book, and I melted the butter and it made the cake quite firm, great for stacking.
