I'm not putting Wilton down. I have used their products for a while but are they the only ones that usually do local cake decorating. I am not a fan of any of their icing, especially the royal icing they so love. Gross! I would just like to enhance on what I know and learn some other things. Maybe some videos someone could suggest.

Also, I am looking for icing colors other than Wilton. I think I saw something in a powder and was said to produce better results.

Thanks

Americolor is a great gel color with much better results.

As for classes, there are decorators who teach all over the country, and many have videos. My favorite is Nicholas Lodge. He teaches in Atlanta and he travels for some classes. His videos are terrific and worth every penny you pay. His website is nicholaslodge.com

You can also try Chefmaster colors. The lady at my cake supply shop loves them, but she admits, that all the reds besides red red give funky colors. I've heard both the chefmaster red and the americolor red (or super red, not sure which) will give much better red without the nasty taste that wilton red gives when you try to get it that really deep red. Hope that helps.

definetly check local cake supply shops. they don't usually have the classes as often as JoAnn's or Michaels has the Wilton series. Usually they run a fall set of classes and a spring set, from what I've seen so far.

Often they're tought by local cake decorators and have different techniques for some things than the Wilton classes do.

It would help if we knew where you were, so if someone is in your area that has info, they could share it with you.
