How Do I Cure Moving Stick Problems

I tried to make a couple of cookie bouquets. I used skewers and I put them in during baking. I tried two different methods. One inserting before baked and also laying on top and pressing down then baking. My sticks want to come out. they move then the cookies spin. I tried putting the icing on the back of the ones I pressed them on hoping to secure it with that but they broke it when handling. I don't know what else to try. icon_cry.gif

Hi Judy, There are several methods you can try. One is using Kayro syrup. After baking, dip the skewer into the syrup then re insert it back into your cookie. Let it set for a while before you pick it up again. I found not moving them gives the syrup time to harden/thicken (so to speak)

Try changing the type of stick you are using. Some times the skewers are too small depending on the thickness of your cookie. Heavy cookies won't stay on thin stick.(I found out the hard way)

You might want to try the sucker sticks. (my preference) I like these because they come in several sizes. I use them according to the thickness of my cookie. Others, as I do, just insert the sticks before baking. I never had a problem with the sticks burning. I feel for loose sticks the moment they come out of the oven. Then quickly dip them in the syrup and reinsert them back. I think the warmth of the cookie helps the syrup to harden. Not sure but it works better.

I dip the end of the stick into egg white or gumpaste glue prior to putting it into the cookie - and then bake the cookie with the stick inserted. They stick so well you usually have to gnaw the last little bit of the cookie off the stick.

I heard that the royal icing works pretty good at holding sticks in place.
