I recently tried making a guava cake using a recipe from allrecipes.com and it turned out having the texture of a breakfast bread rather than a cake. I mean, it was moist, but I didn't care for the dense texture. Does anyone know of a recipe that yields a FLUFFY cake? (doesn't have to be guava). I'm thinking like and angel food cake texture. Thanks

That guava cake you describe sounds like the dominican "Masa Real", which is a very dense and crumbly cake, with a very thin guava layer and then sprinkled with confectioners sugar...This girl in Puerto Rico has made it very popular my selling it in retail stores and malls. Yummy!
Definitely not the route to go when looking for a light cake. icon_biggrin.gif
