I Need Help Fast! Freezing Question!

Hello everyone!

I have started baking for the 400 people wedding cake that I have this weekend. I will be freezing my layers coated with the apricot glaze from sqirrellycakes.

The filling of the cake will be plain buttercream icing(no fruit). I would like to go ahead and put the frosting in the middle of the layers to save some time. Can I freeze the layers with the buttercream already in the middle??? Will it mess up the cake when it starts thawing out???

I always wrap my cakes well and also use the unscented trash bag before freezing. I let the cakes defrost while still in the wrapping. Any help on this would be great! I have cakes in the oven now and will need to wrap and frreze later on.

I won't tell you it won't mess anything up, but I can say, I've never had a problem freezing buttercream. Inside or outside of the cakes. It's always been ok when it thawed out. (for me) I've even had to freeze one or two fully decorated cakes, and not had problems.

I do believe this can be done, personally I just freeze my cake, but know of some that will freeze completely decorated cakes. Remember to let them thaw completely before icing the cakes.

I do this for all of my wedding cakes...no problems to date. I bake, cool, fill, seal, and wrap...then freeze. Just make sure to thaw well, should work fine!

I think you should be fine, although because of freezing the filling I would make certain the cakes were thawed before icing so any setting would occur. My only concern would be if the cake was iced frozen that this filling might settle down and the "Cake bulge in the centre" might occur. I still use a stiff buttercream dam when filling with buttercream filling. I find that this stops the cake from getting any centre bulges or shifting.

Thanks for all the replies! I am going to fill the cakes with icing and then freeze. I will make sure I let the cakes thaw well before frosting. I will post pics of the finished cake! icon_smile.gif

The cake is finished and was delivered today! It was a very large amount of cake!!!!!

I actually did this cake with another lady that asked me to help her. I did most of the baking ahead of time...and wrapped the boards, glazed the cakes, and wrapped the cakes for freezing...etc.

I started decorating the cakes on Thursday. We also had 3 sheet cakes that went in the kitchen. The lady came and picked up the sheet cakes and decorated those at her house with minimal decorating. I started doing the scroll work on the main cake. When she came over on Friday, she said she was unable to duplicate my scroll work. So...I decorated a 14inch, 10 inch, 6 inch, and SIX 8 inch round tiers with scroll work! That was a total of 9 tiers!!!! Also...made most of the icing and stacked the cake! It was a lot of work.

We went to set up at the country club and everyone kept talking about the cake and how SHE was the decorator! I felt like they thought I only came to carry the boxes! One lady came over and asked where we worked and told her we both were independent bakers. She asked me for my website and I told her. My friend seemed irritated and said I needed to say that we both did the cake. I never heard her say one word that WE both did the cake whenever we came in.

It was a valuable lesson...I do better when I work ALONE!!!! We have very different styles and I was quite annoyed with feeling like a side show!!! All and all, things went smooth and the cake made it safely. I will post pictures soon! I am unsure if I will add this one to my website...there were many things I KNOW I would have differently if I did this alone.

That is a valuable lesson! One we probably have experienced at one time or another. I'm sure it looked great! What happens when they are asked to do a cake and they cant duplicate it the way you did it? You do great work! auntiecake

Gee kiddo, sounds like you did a lot of work to help your friend and her response was disappointing. That is sad but there are people that just cannot share the limelight.
A good friend would have explained how much of the baking and decorating you did and how you did all the scroll work and so much of it yourself. A good friend lets their friend shine!
Very sad indeed, but good for you, you got it done and obviously it was impressive!

The wedding was in College Station. The name of the CC was Pebblecreek. I thought it was a beautiful place, however, I felt as though the staff was not very helpful.

I will be uploading pics soon. I am very dissappionted in how the photos came out. I told the Country Club that the cake would be too washed out on the white puffy table cloth. They would not take my advice and would not change it. I only can hope the bride will not be dissappointed in the photos for her album.

Wow, you certainly traveled with that cake. I quake with fear at a half-hour drive across Houston...I couldn't imagine a 2-hour drive!

I'm sorry you're disappointed in the pictures. Have you thought about contacting the photographer to see if they will give you the pics (assuming they're digital) of your cake?

Traci-

It's beautiful! The detail is hard to see--I think that's from the flash on the camera more than the table cloth. I'm sorry you were not given credit for your hard work. At least we at CC know all you did!
