How should I do this.

Hi. I have a problem. I am needing to do a 12x12 square cake but I don't have that size pan. I do have a 13x9 and was thinking of making 2 cakes from that and cutting off what I need for the other 3-4 inches. If I do this, how do I manage to level to the same height? And what's the best way to attach them together. Thanks in advance for the help!

I think the best way to level them would be to cut them at the same time either side by side or end to end using a large bread knife. You could mark the sides with toothpicks to make sure your keeping it level. I've also heard of people using floss to cut through their cakes but I've never tried it. I have the Wilton large cake leveler. I love it! You might want to invest in something like that if you're not handy with a bread knife. I'm not! I can't even cut bread right with my bread knife let alone a cake.

To put the cakes together, try cutting the sides that will butt up against each other at angles so they kind of lock together. Or just put them together using a lot of BC to fill the joint. Use a good, strong board either way so the cake won't flex and separate.

Thanks for the help, Lisa. I am in an even bigger rush now that the party is in 2days!! But I will get it done. I just have to stay focused and get to baking tonight. Will be working overtime to get this thing into gear. Thanks again!

I place cakes together all the time to make larger cakes. This is the rare time I use my cake leveler (if I need to level at all) rather than a bread knife.

If I level my cakes the way I normally do (pressing down on them) I rarely need to level. They are all the same height as the pan when finished.

I also would not try to piece together just 3-4 inches. I would make the two pieces more equal. You may also want to consider: since you're piecing 2 cakes together anyway- make 1/2 white and 1/2 chocolate.

Thanks, Cali. I was just upstairs trying to look at that. I think that I will do 2 13x9's and lay them side by side, level and torte and then do the quilt thingy. I was thinking that since it was bigger, I would put the girl's name on the undecorated portion with some swirls or something like that around it. What do you think?

Okay, I found a 15x11(?) can pan in all of my digging. So I am going to use that. I made all the square quilt pieces, baked, torted and filled the cake today. Now my question is how long will the MMF be okay on the cake if I leave it out overnight? And will it be okay to cut or do I have to soften them again before applying to the BC(with water, I guess)? Haven't done any of it yet. But just wanted to know before I get too far ahead. With such limited time, I really can't afford to make any mistakes.

BTW, I also made my 1st ever batch of chocolate BC. Hubby and kids loved the taste! Thanks for the help.

i'm curious. did the customer ask for a square cake? what type of design is it? sorry, but i've been away for awhile, gotta catch up with everything. icon_lol.gif

Hi, Diane. Yes the requested cake was a square. But I am doing it for a friend. And I have been informing them all the way. I am making a copy of the Go Crazy Quilt in the 2004 Wilton yearbook. I swear that they gave it the right name, too. I am going crazy with all of the demands of changes plus the fact that the party got moved from the 16th to the 7th of this month!!! icon_cry.gif
