Wilton Class Coincidence & Question

I had my first Wilton Course I class on Monday night and it was great! I wish I'd done this 5 years ago...lol. My instructor is a 'snowbird' from Michigan and she did wedding cakes for over 30 years....so she's seen it all. And she knows all those little tricks that I'm dying to learn. In fact, she actually makes me think that she's what SquirrelyCakes must be like in person! Full of knowledge and yet still interested in new things, as well.

Anyway, there was a crazy coincidence with the other students - There are only 4 of us...all moms...and three of us send our kids to the same private pre-school & kindergarten!! But we didn't know each other, somehow, even though the school is kind of small. They're only in it for fun and have no intentions of selling cakes at all. One of them has a daughter who is allergic to eggs and milk, so that was part of her motivation...she'd never worked with all shortening bc before and just wanted to take a basic class to teach her the essentials about it, since she has to make all cakes and stuff for her daughter herself. We had to be extra careful about not mixing up our tools and stuff with hers, in case someone had used cream or milk in their icing and the rest of us used eggs in our cakes, of course. She also offered to share her recipes with me for eggless cakes and such that she uses. I've only had the chocolate flourless cake before...never eggless. I was wondering if anyone else here knows anything about them & how they turn out/taste?

That is a funny coincidence! As far as the eggless cakes, I have had one slice and I can't remember how it tasted. Must not have been memorable! I'm guessing they're not as good as regular cakes or there would be more of them out there. Or maybe they've improved since I've tried it, which could well be the case as allergy problems seem to be running rampant.

The only eggless cake I have had is an old recipe called 'Wacky Cake'. I've seen it numerous times on different recipe sites, also called 'Crazy Cake', and several other different names I can't remember right now. It's a delicous cake, I never even really thought of it as being eggless, it was just a quick one bowl cake that my mom or I would whip up all the time for birthdays, potlucks, or just dessert with dinner. I've also made it without the cocoa, which is also good. I dont' have the recipe on me right now, but it may even be on this site already. If not, I can find it and post it later.
