My future sister-in-law wants fresh rose petals on the top of her cake.....should I worry about these since they are not washed? Is there someway to wash them? For everyone with beautiful fresh flowers on a cake, how do you make sure flower funk doesn't get on your cake? Maybe I should just insist that she do silk rose petals? Or am I completely letting my obsessive-compulsive side take hold? icon_lol.gif

I went to a fresh flowers on cake class and the instructor told us to use organic roses and you can rinse the flowers/petals before using them. But you have to be careful with rose petals since they bruise easily.

put the rose petals in a sink of clean water to rinse them and let them air dry on a towel ...

your not being obsessive ... I worry about the same thing. icon_smile.gif

You aren't being obsessive-you do have to be careful that the flowers haven't been exposed to pesticides, etc. Even then there are certain flowers that are a no-no for cakes! I think you can place a piece of wax paper on the top of the cake to keep the flower petals from actually touching the cake. You can dust the top of the cake with powdered sugar to keep the wax paper from sticking.
