Well most of the cakes I have done or seen that look like water is usuing blue piping gel.I'm not sure if that is what you mean...

Do you think piping gel was added to the white BC to give it that swirly effect when iced onto the cake?

It's usually done with piping gel, but beware, plenty of folks don't like the taste, so use it sparingly.

The way I do water, is to do buttercream on the cake in the color I want the water to be, then lightly tint piping gel, and put it on top of the bc. You can use your spatula to make waves and such. I have never covered a whole cake this way, but don't know why it wouldn't work. You would probably need to pipe a border prior to putting the gel on ... to make sure the gel doesn't run down the sides.

Also make sure you use a strong thick gel like Wilton or CK brand as I made mine homemade from a recipe I think I found here on the site and it was much runnier and seeped into my cake even though I made a top coat of BC.

Another way to make "water"......I made a beach cake..to make the water I mixed blue gel paste into my BC...but didn't stir it too much, so that there were various shades of blue. Made it into waves with the spatula and then sprinkled with clear and blue edible glitter to make it sparkle like water. Dopn't know how well it shows up in the pic:

if you're looking for smooth water look... you can make clear gelatine (Jello) with a litte blue food colour swirled in (just make it 1/2 the standard water so you get the firmer set!)

I did this on my under the sea cake...

Thank you so much for the advice!! I love your beach cake mrsmissey!!! I am doing a BCT onto the cake so I don't need the whole cake to be water, just part of it so this should work fine. THanks so much!!
