What kinds of cookies do you make between holidays, like now between New years and Valentines Day. I was going to make up some Valentines Day Bouquets, but the cookies will last another month if I make them now?

Well, you can freeze the uniced cookies and decorate them closer to Valentine's Day. I used to freeze decorated cookies but not usually with the colour red because it can bleed out in the defrosting process. I wouldn't freeze them if I was making them for sale though, just personal use.
Most decorated cookies, I would plan on a shelf life of three days to be at their best, not that they won't keep longer, this is just a guideline I would use especially for sale.
You can do birthday cookies, anything fairly generic like snowflakes, snowpersons etc., smiley cookies, that sort of thing. Or children themed cookies in bear, train, toy types of themes.
