I would like to make a couple mini desserts, for a party I'm going to, Does anyone have any ideas and recipes ie, bundt cakes, cheesecakes.

Mid-december there were a lot of recipes and dessert ideas posted. You can also do a keyword search for a specific dessert like cheesecake.

I have a mini cheesecake recipe.

2 bars cream cheese
1/2 c. sugar
2 eggs
2 tsp. vanilla
Nilla Wafers

Put vanilla wafer in bottom of muffin paper cup. Mix ingredients. Put on top of Nilla Wafer. Bake at 325 degrees for 25 minutes. Makes about 12.

These are very simple and taste just like a regular cheesecake without the fuss and mess.

Petit fours are always a hit. Single servings, too. Depending on how you decorate, they can be cute, or elegant.

You can use any recipe and m ake it into minis...just use mini pans or cut the dessert into a mini size.

What are you looking for? Chocolate? Fruit? Decadent? Light?

I'm hosting a party and going to do mini deserts, just like cande said use the entier recipe batch and put in small pans.
For my party I'm doing mini cream puffs, mnini cheese cakes, mnini cakes with fondant, small cookies (sheap cookies), cake balls small ones of course and some other little things here and there.

I'm having a bunco party on Fri. nite and I am planning on making "dice" petit fours.... I basically baked a 9 x 13 cake, fill it, freeze it, cut it into squares and then frost and cover with fondant white with black circles. You could do something like that if you didn't have the mini pans available.

I've done the cheesecakes in the mini muffin pan and those come out to be a big hit too...I put the muffin liners in the pan so that they're easier to take out and if I drizzle some strawberry filling on top, it kind of holds it in.

I do mini lemon tarts that go down very well (one bite). I make sweet pastry mini tarts and fill them with home made lemon curd.

I loooooove lemon deserts, I 'm going to try that topping with the lemon curd sounds great. I usually make mini tarts shells( I have a standart recipe that I use) and go crazy with the fillings. Definitely lemon curd with some thin slices of glazed lemons and garnish with couple of mint leafs, ohhhh just talking about it is killing me.
I would love it if everyone takes pictures of their buffet and show us so we can exchange ideas.

Please share your recipe!! Over here I can buy a premade (UK) lemon curd, but it is outrageously expensive (like 12 for a tiny jar). Í would love to make my own!

You could try these mini pecan pies ... I made them to put in Christmas baskets and everyone liked them and they were pretty easy to make.

8 oz. cream cheese
1 cup softened butter
2 cups flour
2 eggs
1 1/2 cups packed brown sugar
2 teaspoons vanilla extract
1 1/2 cups finely chopped pecans
melted chocolate


Beat cream cheese and butter. Add flour a little at a time. Mix well.Refridgerate for one hour. Preheat oven to 375. Divide refridgerated dough into 48 balls. Place one ball in each section of a mini muffin pan. Press in center to make a "cup". Beat eggs lightly in a bowl. Add brown sugar and vanilla. Stir in pecans. Spoon evenly into shells. Fill each one until just about to the top. Bake for 25-10 minutes or until lightly brown. Remove and let cool. Drizzle with chocolate in a zig-zag on the top of each one.
YUMMY!!

The mini cheese cakes sound yummy. How do you take them out? Just invert and invert again?

If they are in paper cupcake cups you don't have to invert or anything. Just pick them up like you would cupcakes. You put the cups in a muffin pan and pour the cream cheese on top of a nilla wafer. I top them with cherry pie filling.
