I just made the Snow White Cake recipe found in Colette's The Art of Cake Decorating book and found the cake to be light but not very flavourful. So I was wondering if I should increase the amount of vanilla extract or if I can substitute butter for the Crisco shortening to add flavour to the cake. I'm trying to find a white/ yellow cake recipe that is light.

If you substitute butter for the shortening, you will get a much more dense compacted crumb, which doesn't sound like what you are looking for. So yes, increase the vanilla by about 1/2 tsp to 1 tsp. or add 1/4 to 1/2 tsp. almond extract.

I've made that recipe a few times, and it's not my favorite. I've just given up on it and tried to find another one that tastes better.
I thought that cake was good, but like the others it didn't impress me as much as I had hoped.
I would look for another recipe instead.
I LOVE the White Butter Velvet cake from "The Cake Bible" by Rose Levy Beranbaum. It's fabulous.
