Fondant In Fridge?

I have some white chocolate fondant (using baking911.com recipe) that I made around Thanksgiving. I had intended on using it right away but never was able to. Is it safe to eat or even usable? I hate to throw it away but that's life! Its double-wrapped in Saran and has been in the back of the fridge.

I am not familiar with the recipe, but most fondant will keep weeks in the fridge, and longer in the freezer.

Unless the fondant contains raw egg or some other perishable, it should be fine, as long as it didn't dry out. Warm it to room temp before you try to roll it. A quick few seconds in the microwave can also help.

If the outside edge is dry and sort of crusty, don't try to mix it in. You will get lumps.
