Does anyone have any idea what I can do with the leftover ganache. I have it sitting in the drip pan still so before it solidifies some what can I do with it?

Thank you so much!

I refrigerate for 1 week or freeze. To freeze place into a tupperware type container and cover with a piece of plastic wrap directly on top of the ganache. To use ganache again, defrost and reheat slowly. icon_smile.gif

Do you think this can be used to dip fruits in like strawberries!!! I usually just dip in melted chocolate nothing with whipping cream in it.

am I too late to answer? I take mine and put it in the fridge to get it hard. Melon ball it out and roll into crushed fine and toasted almonds. Then dip into melted chocolate or roll lightly into cocoa powder. OR you could just eat them without the chocolate covering like I do instead of going to the gym icon_lol.gif You could also put it into the fridge and save it then pipe it into something kind of like a cream puff that's sprinkled top with powdered sugar. Or you could warm it up just a little and pipe into an eclair. OMG, I'm so hungry now. I hope your happy now I have to go to the fridge and look for something sweet icon_lol.gif

I made mini Chocolate cheesecakes and poured the ganche over the top. Also made filled chocolates with it and mixed flavored liquor with the ganche for the filling, it was great! I just save it in the fridge have make different treats nightly. Small sizes though so I do not get to be a bigger size!

Yes eat it! But ganache is what truffles are made from so you can easily let it get hard in the fridge and roll in whatever you like to make some truffles.

Nope, not too late at all. I put it in a container, covered it and now it's in the fridge. I really like the ideas of melon balling it out and rolling it into nuts of sorts. Almonds would be good!!!

I'm so sorry that ya'll got the chocolate cravings now! Definately take a sneak when the kids aren't looking! That's funny!!! I thought I was the only one that did that!!! icon_lol.gificon_lol.gificon_lol.gif Some things I just don't want to share you know! icon_lol.gificon_razz.gif

Thank you everyone for the new ideas for left over ganache!!!

You are a better woman than I! That ganache would never have made it to the fridge. At least not all of it. But next time, I'm going to try the melon ball thing. That's a pretty cool idea.

Isn't it though?! A great idea! Just the phrase "melon ball it" makes me think of soft creamy luscious (okay luscious might be taking it a bit far) chocolate that melts in the mouth. Ya'll know I have a show cake I am working on. I can't be side tracked with all this talk of truffles and what not!! icon_wink.gificon_razz.gif

I freeze it, and put a chunk of it in the middle of each chocolate pudding serving while it's still hot and on top of hot chocolate instead of whipped cream.

There was another thread where someone said to roll it into a big ball and put it in the middle of a cake before baking. When cake is done, its a chocolate molten cake. Haven't tried it yet but sounds like heaven!

Balls of set ganache rolled in powdered sugar or cocoa paowder, can you say Truffles? icon_biggrin.gif

I save leftover Sarah Bernhardt glaze which is similar in texture to set ganache, freeze it and when I make a chocolate cake I thaw and put it in a piping bag with a #10 plain piping tip and use it to make my dam and to fill in the line on the outside of the cake where the two layers join together. It uses up the ganache, and filling in that line where the two cakes meet prevents the dreaded bulge problem at the same time. Just smooth the piped line with an icing spatula and then crumb coat and final icing. If you have a fairly large amount of ganache left you can also use it to crumb coat the chocolate cake.

But I am glad we a bit far because I am still trying to lose the 10lbs. I gained during Christmas.

I have got to try it.
