Royal Icing/melted Chocolate Piece.

Hi everyone. I have been working on a piece for my cake that is due tomorrow. It incorporates royal icing pieces on top of a chocolate molded piece. I want to stick them together now since I am working and trying to work on the cake today and tomorrow. Is it okay for me to do that and then return the entire piece back to the fridge? I don't want any happy kid fingers on it while I am at work. Please help if you can!!

I wouldn't advise refrigerating royal icing or chocolate.

The royal icing will pick up the moisture from the air in the refigerator and go soft. If the fridge is very cold, the chocolate could "bloom"--get a white coating on it when the cocoa butter sort of comes to the top when it gets too cold. Royal icing in direct contact with cocoa butter will also compromise the royal.

To be honest, in your position, I would just try to put the piece as high up and out of the way as possible. If lifiting it to the top of a cabinet or fridge isn't possible, perhaps just moving it to the center of a table or counter and then camouflaging it with books or pans around it would do the job.
