Cake Mix Vs. Scratch

Hello! I am new here. You all are amazing. I am a little leaguer compared to most of you so I am hoping to gain a lot of wisdom from all of you.

When making a decorating cake, do you prefer cake mix or scratch mix? Do you doctor up a cake mix? I prefer to bake and eat scratch cakes and I know if I am stacking them, I need the firmness. So, what do you seasoned veterans prefer?

I personally prefer a mix, saves me a lot of time and effort...especially when there are a lot of cakes to do. I do "doctor" them up a bit. Especially when making a tiered cake.

I think for most of us here it is just a matter of preference. A lot of bakers make cakes from scratch, and some use mixes!

I haven't read the other thread, and I'm just a small-timer too, but I love the Cake Mix Doctor's recipe. Check out http://www.cakemixdoctor.com There's also a message board there to ask questions/discuss recipes...

gmcakes, I totally agree. It depends on what you like to work with or what the customer requests.

I use doctored cake mix so that I get consistent results... if I had more time icon_cry.gif I would definetely love to take the time to perfect scratch recipes.
I wholeheartedly agree in the opinion that you should invest your money in the Cake Mix Doctor book.
