I am too lazy at this point in time to make a scratch cake for this, at least lets say if I can get around it I will. I loved making pumpkin rolls at Thanksgiving and thought a choc. cake with twinkie filling covered in ganache and decorated with MMF pointsettas on top would be sooo nice for christmas but.... I am running out of steam quickly.

Can I use 1/2 of a choc cake mix and less eggs per roll? Will it work?

you can just bake the whole cake in a jelly roll pan, I have done it with no problems, I have an 11 x 15 pan, it's just right. good luck, it sounds really good!

So much for the idea -Nothing sticks to parchment. I tried a choc. cake mix with2 eggs instead of 3. Put it in a jelly roll pan. Baked it beautifully. Dumped it out on parchment, rolled it up, let it cool abit....When I unrolled the top "skin" of the cake stuck to the parchment and it cracked badly. I went ahead and filled it rolled it back up and stuck it in the fridge. We will see if I continue with this little project or not after it sets up.

I would add three eggs like it said, but increase the oil just a bit. Then try it in the jelly roll pan. See if that works!

Hey as long as they taste okay, save the screw-ups and use them for cake balls!

don't feel bad--I tred my first Yule log--came out of the oven beautifully and rolled beautifully. But when I unrolled it, it fell into about 100 pieces! I tried to salvage it--tasted good but looked like a chocolate explosion........not sure what happened. Guess these take some practice..........

I had the parchment stickiness thing happen with my pumpkin rolls, too. Try dusting the parchment with powdered sugar first - it won't stick!

Good Luck! It can be a pain in the tush to work the kinks out, but it'll be worth it in the end! thumbs_up.gif
